Vegan pancakes!

It's pancake day on Tuesday and if you think that you can't join in because you're vegan, think again. These pancakes are more like American style pancakes than the traditional larger crépes most non vegans will be making on Tuesday but hey beggars can't be choosers and these taste amazing. Give them a go and let me know what you think, they might just become your new fav breakfast. 


I made them for Emily's valentines day breakfast, sorry about the photo didn't really think about taking a good photo. Anyway here's how you make these wonderful pancakes. 


Ingredients 
• 1 cup flour 
• 1 tbsp sugar 
• 2 tbsp baking powder 
• 1⁄8
tsp salt 
• 1 cup soya milk 
• 2 tbsp vegetable oil 

Method 
1. Combine the 4 dry ingredients (flour, sugar, baking powder and salt) together in a bowl. 
2. Add the soya milk and vegetable oil to your mixture and mix until smooth.
3. Pour batter into oiled pan and cook on medium heat. 
4. Flip once the edges of the pancakes are looking stiffened. 
5 Serve with maple syrup and a dusting of cacao.

 

I hope you find this helpful, they are super easy to make and you'll get about 6 pancakes from the mixture.
