Pecan Banana Bread Doughnuts

If you follow this blog you will have no doubt seen my post for Biscoff Doughnuts, these were one of my favourite creations to date and to make them i had bought a doughnut pan, a doughnut pan that had remained unused until i thought about making banana bread.

The only reason these doughnuts exist is because i opened the cupboard to get my bread pan out and saw the doughnut pan sitting unloved in the corner. This recipe works so well as a doughnut i thought i had to share it. Pecans and banana are a match made in heaven so obviously these doughnuts are to die for. 





Ingredients

3 Very Ripe Bananas
75ml oil of your choice
100g coconut sugar
225g flour
2 tsp baking powder
3 tsp mixed spice
50g chopped pecans 

Icing
50g almond butter
100g icing sugar
3 tbsp almond milk

Method

1. Heat the oven to 180c/gas mark 4 and grease you doughnut pan.
2. Place the banana, oil and coconut sugar into a blender and pulse until smooth. Pour into a bowl.
3. Add the rest of the ingridients and mix to combine, once combine pour the batter into a piping bag.
4. Pipe into the doughnut pan, place the oven for 15 to 20 minutes or until a toothpick comes out clean. 
5. Whilst the doughnuts are cooling prepare the icing by mixing all the ingredients together in a bowl.  
6. Dip the doughnuts in the icing and leave to set.
7. Eat for breakfast or as a snack.
