"It's easy to be vegan" Breakfast


Hey guys, the title may give this away but I'm writing a series of post about how easy it is to be vegan, and I'm starting with the most important meal of the day, breakfast.

I have posted a few breakfast recipes before you can find them herehere and here. This post is about quick, easy and filling morning meals that you can knock up even if your head is still in bed. 

The following are my three go to breakfasts, one is super quick and the other two take a little over 10 minutes to prepare. 

1. Rice Cakes with Cashew Butter and Jam


This one is super quick and tasty, you can use any kind of jam you like but for me it has to be blackcurrant. 
I used Kallo Buckwheat Rice Cakes, Meridian Cashew Butter and Hartleys Blackcurrent Jam all of which state on the packaging that they are vegan. 


2. Super Berry Smoothie

This one requires a little bit of prep before you can make it but it's nothing time consuming, it's just peeling and chopping fruit. 

I use the following amounts of fruit.
2 bananas
10 strawberries
A handful of frozen blueberries

To this I add about 100ml of Koko Coconut Milk, 2 sachets of Bioglan Raaw Juice, Berry Blast Powder and 1 tbsp of ground flax seeds. 

Add all the ingredients to a blender and blend on high speed (I use the smoothie setting on my Bella Extract Pro, but the highest setting on your blender will work fine). Once blended pour into a glass and drink, it's that simple.
The added flax boosts the nutritional value of the smoothie as it is high in omega 3 and also has a load of protein and fibre with very little carbohydrates. 

If you like you could add some protein powder to the smoothie or even some nut butter but be careful when doing so because the calories can soon mount up.

3. Vegan Protein Pancakes


Like I said up top this one takes a little longer than the first one but it still comes in under 10 minutes and is perfect if you work out before breakfast. Giving you a protein boost to help you muscles replenish after going hard in the gym. Don't be put off if you have never made vegan pancakes these are easy.

Ingridients
  • 120g all-purpose flour
  • 30g vegan protein powder (I used Sunwarrior Vanilla)
  • 1 tbsp baking powder
  • 1 tbsp peanut butter
  • 1 tbsp chia seeds
  • ½ tsp salt
  • 2 tbsp maple syrup
  • 200ml soya milk
  • 100ml water

Method
1. Mix can all the ingredients in a bowl until just combined (you want lumps)
2. Heat a tbsp of oil in a frying pan and and pour a small amount to the pan, wait until the top has started to bubble the flip. Cook for another 2 minutes and repeat. 
3. Top with maple syrup and blueberries then tuck in and enjoy.
