Simple Seitan "Turkey"

Hello guys, I've been waiting to make this for a few weeks. It's a little more time consuming than most of the recipes I post, i made this on my week off a few weeks back and have just gto round to writing up

Seitan is a meat substitute made using Vital Wheat Gluten, a flour which contains a high amount of gluten, when mixed with water and other ingredients it makes a mean faux turkey for sandwichs.


Heres a little history of Wheat Gluten "Wheat gluten first appeared during the 6th century as an ingredient for Chinese noodles. It has historically been popular in the cuisines of China, Japan and other East and Southeast Asian nations. In Asia, it is commonly found on the menus of restaurants catering primarily to Buddhist customers who do not eat meat."


I made this seitan and served it in a homemade bread sub with hummus and baby spinach. It was delicious.

Vital Wheat Gluten can be hard to find, i used Suma brand Vital Wheat Gluten which you can purchase from Alternative stores (you can also get it on their website) and Roots4Life if you live in Newcastle. You can buy it online here if you're not from Newcastle







Simple Seitan "Turkey" Subs

Prep time: 5 minutes
Cook time: 1 hour 10 minutes
Total time: 1 hour 15 minutes
Yield: 1 Seitan Roll
Ingredients
  • 1 can White Beans
  • 2 cups Vital Wheat Gluten
  • 1/2 cup Nutritional Yeast Flakes
  • 1 cup Organic Veggie (I use Kallo)
  • 1 tsp Liquid Smoke
  • 2 tbsp Oil (I use Cold Pressed Rapeseed oil)
  • 2 tbsp Agave Necter (or liquid sweetener of your choice)
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Salt
  • 1 tsp Black Pepper
Cooking Directions
  1. Add all the ingredients except the vital wheat gluten to a blender and pulse until a smooth consistency.
  2. In a bowl place the vital wheat gluten and pour over the wet mixture, combine until you a have a smooth dough.
  3. Remove from the bowl and kneed on a clean surface for a few minutes until you have smooth, elastic dough.
  4. Wrap the dough in tin foil and steam for 30 minutes.
  5. Once the roll has steamed for 30 minutes place in a preheated gas mark 6 oven for 40 minutes, turning every 10 minutes to make sure it doesn't burn.
  6. Once cooked remove from the oven and allow to cool.
  7. Slice into thin slices and serve in a sub with hummus and spinach, or any other fillings you would like.
So this is quite a long process but the result is fantastic, much better than any vegan sandwich "meat" substitute you can buy. It's fresh and its free from additives which is never a bad thing.
